3 Easy Egg Recipes

Ingredients
2 tablespoons vegetable oil
1 medium onion, chopped fine
2 medium tomatos chopped fine
Green, red, yellow bell peppers
3 green chilli peppers slit lengthwise
2 teaspoons ginger-garlic paste
1 teaspoon red chilli powder
1/2 teaspoon turmeric powder
4 eggs whisked lightly
1 teaspoon butter
Salt
1/4 cup chopped coriander leaves divided

Procedures

Heat oil in a pan till shimmering. Add onions and stir till they become soft, now add tomatoes and bell papers and mix well till they become soft . Add green chillies and ginger-garlic paste, stir till aroma is released. Add red chilli powder, turmeric powder and stir till oil separates from the mix. Take care not to burn the mix. Turn the heat down to low. Add the whisked eggs and salt and gently stir till the mixture curdles. After 30 seconds raise the flame and Vigorously stir the egg mixture around and break bigger clumps up. Add 1 teaspoon butter as you stir and let it melt into the egg mix. Add fresh coriander and mix well. Now it is ready to be served it taste best with lightly toasted bread.

Egg Salad Sandwich Recipe

Makes 3-4 sandwich
Ingredients
3 eggs
Mustard sauce 1 table spoon
Mayonnaise 1 1/2 tbspn
Salt
Black pepper
Lettuce leaves 5-6
Multi grain bread 8 slices
Finely chopped medium sized onion
Finely chopped 1- 2 tomatoes

Procedure

Boil the eggs for 5 minutes. Switch off the flame and cover them with a lid and set them for other 5-7 mins in hot water. Cool them and peel them.
– Finely chop two hard boiled eggs. Add 1/2 tbsp of grated cheese ( optional) one finely chopped small onion, 1 finely chopped small tomato, pinch of salt and black pepper powder to season, and 1 1/2 tbspn mayonnaise ( instead of mayonnaise u can add Greece yogurt or hung curd) mustard sauce 5-6 drops Mix well.

Apply butter (on one side)of two slices of bread. Now spread this egg salad all over on one slice, keep a lettuce leaf place the other bread slice on it and toast till golden. Serve warm.

Omelette curry recipe

Egg : 2
Salt to taste
Chopped green Chilli : 1 medium
Chopped Onion : 1
Chopped Tomato : 1
Cumin Seeds : 1 tsp
Coriander Powder : 1/2 tsp
Turmeric powder : 1/2 tsp
Red Chilli powder : 1/4 tsp
Cooking Oil : 1 tbsp
Ginger Garlic Paste : 1 tsp
How to Make omelette curry

Break the egg in a bowl and blend till it becomes smooth and fluffy.
Now take a non stick pan, heat it, and pour the eggs and Cook to from both the sides to make an omelette. Now keep the omelette aside and put the pan back on the flame , heat 1 spoon of oil add cumin seeds, add chopped onions , cook it for 2-3 mins add coriander powder, turmeric powder, red Chilli powder and fry for 30 seconds. Add ginger garlic paste.
Add chopped tomato and green Chillies and add salt to taste.
Cook it for 3-5 minutes, till it becomes soft and starts leaving oil.

Add 1/2 cup of water and bring it to boil.

Add omelette pieces and cook further for next 5 minutes on low flames.
Cook till the gravy becomes thick.
Omelette curry is ready to serve.
