Extra virgin olive oil is nothing but fruit juice extracted mechanically from olive fruit.

today we find different varieties of olive oil in the market and we get confused on how to differentiate.
All olive oils come from the same source – olives. The amount of processing they undergo makes them different from each other.

Varieties include:

Extra virgin – when the juice is extracted by pressing olives for the first time extra virgin oil is gathered. It is considered to be the best and least processed.There is no heat or chemicals used in the extraction process.
Virgin – it is gathered from the second pressing.
Pure – undergoes some processing, such as filtering and refining.
Extra light – undergoes considerable processing and only retains a very mild olive flavour.

Olive oil is the monounsaturated fat which means it is a good fat containing high amount of anti oxidants and the best part is it is cholesterol free.

1 Olive oil is good for  heart
It protects against heart disease by controlling LDL (“bad”) cholesterol levels and it raises HDL (the “good” cholesterol) levels.olive oil contains Oleic acid ( omega 9)which helps  in keeping our arteries supple. It make  arteries more elastic Two tablespoons daily can make you more resistant to strokes and heart attack.

2 Olive oil lowers blood pressure
Those who are taking medicine for lowering blood pressure should switch to olive oil for cooking and salad dressings as olive oil have the properties to lower and stabilize the blood pressure.

Olive oil is good for the arteries. Alzheimer is one of the disease  associated with the clogging of arteries caused by cholesterol and saturated fat. Replacing other fats with olive oil will reduce the risk.

4. Gallstones - Olive oil promotes the secretion of bile and pancreatic hormones naturally and lowers the incidence of gallstones.Olive oil is very well tolerated by the stomach. In fact, olive oil’s protective function has a beneficial effect on ulcers and gastritis.
