Which metal to be used for cooking?

Right cooking utensils have to be chosen carefully as it not only affects the quality of recipe, it’s flavor, texture, aroma but also affects the nutrient value of the cooked food.

Normally used metals for cooking are copper,  iron , steel and aluminum.
Right cookware: Using iron tavas and kadhai are the great way to increase iron content of your food and it is also a safe metal to use so is stainless steel and glass.
Stainless steel utensils are one of the best because they are long lasting, corrosive and does not react with acidic or alkaline food. They can be used in combination with copper and aluminum

What not to use: copper, cast iron and aluminum have proven to be chemically reactive to acidic and alkaline foods. They can alter the flavor of food and if food stored in them for a longer period it can lead to food poisoning.using aluminum cookware is dangerous as in the process of cooking aluminum leaches from the pot or pan and makes its way into your food and then in your body. Aluminum inside the body neutralize digestive enzymes, increases risk of ulcers and if present in large quantity it can lead to Alzheimer’s disease. So stop using these cooking utensils and best use iron or use non stick or steel or glass utensils.

Now a days many new cooking utensils are available in market which are made by combining aluminum and copper with other metals like
Anodized aluminum cookware-
Anodizing aluminum prevents aluminum leakage and make it safe for acidic foods.

Clad aluminum / clad copper cookware- cladding means covering one metal with other Like stainless steel to avoid cooking hazards. Again it is also safe for cooking food.
