Healthy White Sauce Pasta

Have you ever Heard of tasty and healthy white Sauce Pasta with no refined flour???

Macaroni pasta, vegetable Pasta

Oh yes Pasta can be other option in the list of healthy food.
This recipe is easy and delicious. In this recipe I chose Macaroni because I have found that Penne & Macaroni soaks up the sauce and keeps the pasta warm for a while. I advise to chose brown pasta made from whole wheat as it is too health and in this way you can avoid the no good refined pasta. You can customize this pasta by adding vegetables of your choice, and if you are serving it to children you can add more cheese for variety.

Ingredients

Macaroni – 1 cup
Mixed Vegetables of your choice – Broccoli, french beans, Tomatoes, Zucchini, Mushroom,Carrot & Baby Corn- Chopped 2 cups
Olive Oil – 3 tbsp
Butter – 1 tbsp
Oats Flour – 3 tbsp
Milk – 1 1/2 cups
Water-1 cup
Salt and Pepper to taste
Dried herbs of your choice – 1/2 tsp each (we like Basil and Oregano) or Pasta mix herbs (Available in Market)

Method
Cook the pasta - In a deep pan add around 10 cups of water to boil.Add a tbsp of salt.Half spoon of oil. When the water stats boiling, add the pasta.Cook for 12-15 minutes until the pasta is cooked or  follow the instructions on the packet. Drain the pasta in a colander or sieve. rinse with running water and keep aside. you can sprinkle a few drops of oil and gently toss them.
Cook the vegetables – Add oil in the non stick pan and cook the vegetables with little salt. Take the vegetables out in a plate, to make white sauce in the same pan.
White Sauce Take the non stick pan, Add 1 spoon butter and 2 spoons olive oil. When butter melts (10-20 seconds) add oats flour saute for 1-2 minutes. Mix in the milk and water little at a time stirring all the while so that no lumps form.Let it come to a boil-it will look thin in the beginning but with start thickening as it cooks.

Now add Salt, Pepper and pasta mixed herbs, chilly flakes, Oregano. Add vegetables and boiled Pasta. Cook for 3-5 minutes or until the sauce coats the pasta and vegetables.Check for seasoning.
Serve hot.

• Note- Do not throw away the water in which you cooked the pasta and vegetables-it contains starch and can be used to thin down the white sauce if it becomes too thick.
