Vegetable pulao

Vegetable Pulao.

Cooking Time: 25 mins
Makes 4 servings

Ingredients
1 1/4 cups long grained rice (basmati)
1 tsp ghee
(2”) piece cinnamon
2 cloves (laung / lavang)
2 cardamom (elaichi)
2 bayleaves
1/2 tsp Cumin seeds/ zeera
1 big size sliced onions
1 big carrot  sliced
7-8 french beans sliced.
2-3 mushrooms sliced
1 handful of  fresh green peas
salt to taste

Method
Clean, wash and soak the rice in enough water for atleast 15to 20 minutes. Drain and keep aside.
Heat the ghee in a non-stick pan, add the cinnamon, cloves, cumin seeds, cardamom and bay leaves and sauté on a medium flame for half a minute.
Add the onions, carrots, french beans, mushrooms, green peas,  or other seasonal vegetables of your choice (broccoli, cauliflower, etc.) cook for 3-5 minutes , now add rice and salt, mix well and sauté on a medium flame for another minute.
Add 3 cups of hot water, mix well and cook on a slow flame for 15 to 20 minutes or till the rice gets cooked and the water has evaporated. Serve hot with curd.
It taste better when served with vegetable or mint raita.
